Cheesecake

CRUST

 

 

1/4 cup butter or margarine
1 1/3 cups brown sugar

 

 

 

FILLING

 

 

2 - 250 g pkg cream cheese

egg yolks
1 cup granulated sugar
2 Tbsp lemon juice
1 tsp vanilla
2 cups sour cream

egg whites - room temperature

CRUST:

Melt butter in saucepan over medium heat. Stir in crumbs and sugar. Pack into 10" round springform pan or use a 9" square pan. Bake in 325F oven for 10 minutes.

 

FILLING:

Beat cream cheese, egg yolks, lemon juice and vanilla together. Mix in sour cream.

Beat egg whites until stiff. Fold intocheesemixture. Pour over crumb crust. Bake in 325F oven for 1 hour. Turn oven off and leave cheesecake in oven for 1 hour more.
