CHRISTMAS COOKIES

1 cup - 250 g butter or margarine
2 cups of confectioner's sugar

egg yolk
2 cups sifted flour
1 1/2 tsp cinnamon
1/8 tsp salt
1/2 tsp nutmeg
2 cups - 220 g ground unblanched almonds

 

 

candied cherries - halved

1) Cream together the butter or margarine and sugar until light and fluffy.

2) Mix in egg yolk.

3) Add flour, cinnamon, salt, nutmeg and almonds and blend well. Knead on a floured board for two minutes.

 

4) Shape into small balls with hands dusted with confectioner's sugar.

5) Put on a cookie sheet about three inches (8cm) apart. Press a candied cherry half in the center of each cookie.

6) Bake in 350 degrees F oven for about 15 minutes. Makes about 3 dozen.
