FROSTY ALMOND SNOWMAN

3 1/4 cups all purpose flour
1 envelope Fleischman's quick rise yeast
1/4 cup sugar
1/2 tsp salt
1 cup ground almonds
grated rind of one lemon
1/4 cup water
3/4 cup milk
1/4 cup butter or margarine
1 tsp almond extract
1 egg
Snowdrift frosting
assorted dried fruit

Set aside 1 cup [250 ml] of flour. Mix remaining flour, yeast, sugar, salt, almonds, and lemon rind in large bowl. Heat water., milk and butter until just hot [about 125 degrees F / 50 degrees C] and stir in almond extract. Stir hot liquid and egg into dry ingredients.

Mix in enough reserved flour to make a soft dough. Turn onto flavored board; knead 8 to 10 min. Cover; let rest 10 min. Shape dough into 3 balls - small, medium and large. Place balls on greased cookie sheet, one above the other so they are touching [moisten dough where they touch]. Cover; let rise in warm place until almost double - about 30 min. Bake in 375 F [190 C] oven 30 to 35 min. Cool frost with Snowdrift Frosting and garnish as a snowman with assorted fruit. Makes one Snowman.

 

Snowdrift forsting:

Combine 2 cups [500 ml] sifted icing sugar, 1/2 tsp [2 ml] almond extract and 3 tsp [45 ml] milk until smooth.
